That carrot ginger dressing is definitely ubiquitous and a good guess! I would also venture to guess it might be the goma-ae salad of spinach with a sesame dressing. We do a version of that quite often: Toast about 2 T sesame seeds, grind them with 2 T sugar in mortar and pestle and stir in about 1 T soy sauce. Sometimes we add a bit of sesame oil and brown rice vinegar or a touch of mirin. It is great on all sorts of green vegetables and really quick and easy.
