190F is the book answer, but if you buy a Boston Butt, it is done when you can easily pull the bone out of the meat. At that point, all of the yummy magic has taken place, the fat has begun to melt and your meat will fall apart. In other words, guests won't pull out half of the meat with one bite of sandwich.
