Can anyone suggest a good, sort of autumnal drink to make with sauvignon blanc? I just found a slew of the stuff!

Agree with Kirkwood Tiger, if the wine is decent, then drink it!

If the wine is not so great, you could use it to make white mulled wine. Warm in a pan with some slices of orange and spices (cardamom, cinnamon, ginger etc) and a little sugar. Keep covered so you don't lose all the alcohol (don't boil), and when making, use 2 bottle wine to 1 bottle water to keep the mixture a bit lighter. If you like a little kick to your mulled wine, you can also add some rum/brandy/calvados or a liqueur of your choice.

This makes a lighter alternative to mulled red wine.

Oh, goodness . . . I just put up a bunch of pints of pear and vanilla aigre-doux, and had quite a bit of syrup left over. It would be fantastic as the base of a wine spritzer. In fact, I was even going to post it one of these days. Two parts white wine to one part really nice quality white wine vinegar + 1/4 part sugar, or to taste, with a vanilla bean pod and seeds scraped out, makes the syrup. Simmer with (for each cup of syrup) a peeled, cored and quartered very ripe pear just long enough to release the pear juice. Be very gentle with the pear so it doesn't break down, clouding up the syrup too much. Remove pear pieces and vanilla bean. Add more wine. Depending on the temperature outside, cool and then chill in the fridge, to serve with very cold, or serve warm in mugs. Enjoy! ;o)

I don't know about beverages, but I often use sauvignon blanc (with some sugar) to poach pears. You could add a cinnamon stick. The poaching liquid, after the poaching, is good on ice cream too.
