What to cook with bitter melon?

My Mom typically did a stir fry with ground pork and thinly sliced bitter melon. Sometimes she would add Chinese dried shrimp, or black bean paste, for extra punch.

Slice thin and deep fry until crisp. Sprinkle salt, cayenne and amchur powder (or lemon juice). Yummm!!!

here are a couple of recipes.. The key is to salt the bittermelon to remove the bitterness or fry it out to manageable levels, As with Chile peppers, there is no guarantee that 2 fruits from the same plant will have the same levels of bitterness.
