My Mom typically did a stir fry with ground pork and thinly sliced bitter melon. Sometimes she would add Chinese dried shrimp, or black bean paste, for extra punch.
here are a couple of recipes.. The key is to salt the bittermelon to remove the bitterness or fry it out to manageable levels, As with Chile peppers, there is no guarantee that 2 fruits from the same plant will have the same levels of bitterness.
