Hello and thanks for the answer. They are a special variety of eggplants. They seem to have a little more seeds inside than the "usual" ones. A ratatouille is exactly what i plan if making with them ! Thx
Are those a special variety of yellow eggplant, or white eggplant that turned yellow because of excess heat? I ask because the white eggplant in my garden all turned yellow because i didn't pick them soon enought. They were still edible, but extremely bitter. I salted them and let them drain for 30 minutes, then made a ratatouille with lots of red pepper, tomatoes, and tomato paste to counteract the bitterness. It was delicious. On their own, though, the eggplants were too bitter to eat. They also benefited from being cooked until the carmelized stage in lots of olive oil.
