in Step 2, simmering the cauliflower, do you cover with a lid or not?

It doesn't really matter (it's simmering for such a short time, the stock doesn't reduce down much). But we covered each time we tested it, since our cauliflower was poking up out of the liquid and we wanted that part to steam and cook through without having to turn the cauliflower over frequently.
