Shred some cheese into a hot skillet, covering the whole bottom. Timing is critical! You want the cheese to just start getting hard but not burning. Get the cheese out of the skillet then add fillings (previously prepared) and fold or roll the fried cheese around the filling. It's like using the cheese in place of a tortilla.
