I have a question about the recipe "Cream Cheese Cookies" from Merrill Stubbs. Can one use a gluten free flour with recipe....like King Arthur brand.

I don't know about this specific recipe but have you used King Arthur brand gluten free flour before? I did not have good results when using it to make oatmeal cookies (with gluten free oats). I don't know much about the science, but I don't think the King Arthur brand has either zanthum gum or guar gum so you can't really substitute it cup-for-cup. Hopefully, someone with more baking knowledge can let us know!
I think I am going to splurge on the Thomas Keller GF flour for $20. I'm told you can use that in place of ABF in any recipe.
