Turkey thermometer thingy notorious for producing overcooked turkey by the time it pops up. Got a thermometer to measure 165 degress in the thigh?
Don't use the pop up thermometer that is in the turkey. They are not reliable and usually if it does pop up the turkey will be over done by the time it dies. Use your own regular meat thermometer or check the turkey with an instant read thermometer when you get close to the suggested finish time
