How long can I storage toasted coconut? And what is the best way to do it?

It will keep quite a while (several months) in the freezer, as will untoasted. As a lifelong coconutaholic, I've found this to be true.

I'm not an expert, but if it's toasted, just throw it in a zip-lock bag and freeze it. I'd guess it would last several months. Now, when you defrost it, it might be limp because it contains a lot of moisture. You might need to re-toast it a bit on a sheet pan. Well that's my guess, anyway!
