Question about Porcini and Rosemary Crusted Beef Tenderloin: How much in advance can I cook this? How long can it rest when it comes out of the oven?

Hi kas, the recipe calls for resting 15 minutes, but you could certainly stretch that a good 45 minutes or more, tented with foil, in a warm part of your kitchen while you finish everything else up. If you want to hold it longer, you may want to do so in a very low oven (about 125 degrees).
