Considering making the NYT/Cooking for Mr. Latte ginger duck, but am feeling lazy and considering getting chicken instead of going to a third market. Any ideas?

Yes you can, but you would have to call it Ginger Chicken instead ! I would hold back a bit of the ginger because chicken is much lighter in flavor than duck.
