You could substitute another fat, fresh Italian sausage. I buy my cotechino through a local plant but for them it's a seasonal item. If you have an Italian deli nearby that would be a good place to start. For next year, you can order it directly through Alle-Pia in Atascadero, CA. They ship nationwide.
