This is probably too late but - vegetarian paella, vegetarian enchiladas (corn tortillas), mushrooms and polenta, vegetarian pad thai, ratatouille, asparagus and leek risotto, a soufflé and a salad.
You can make any protein and serve it with a roasted veg. The roasted vegetable could be prepared early. If you choose to make fish, you can bake, broil, or grill it in almost no time at all.
