Its 1pm and I just found out I have to cook dinner for 4 and it has to be gluten free and vegetarian. What should I make? What can be prepared early?

This is probably too late but - vegetarian paella, vegetarian enchiladas (corn tortillas), mushrooms and polenta, vegetarian pad thai, ratatouille, asparagus and leek risotto, a soufflé and a salad.

You can make any protein and serve it with a roasted veg. The roasted vegetable could be prepared early. If you choose to make fish, you can bake, broil, or grill it in almost no time at all.

What about some quinoa with roasted vegetables and a green salad? The quinoa you can do ahead and even serve room temperature.
