I put my store-bought pastry (Tenderflake, vegan) in a ziplock bag and immersed it in cold water (with a plate on top to keep it down). I pressed it a bit while it was thawing. It thawed surprisingly quickly. I didn't time it, but I think it took about 30-40 minutes.

Super easy and it often works better than leaving it out. Put in the microwave on 50% power for 20 seconds. Flip over and repeat. If it still needs more thawing, do at 10 second intervals until soft enough to unfold. Then leave it out on the counter for a few minutes and it should be good to go. I've literally done this more than a hundred times and the only time I've messed it up is when over did it in the microwave.

You can also place it in a ziplock plastic bag and immerse the bag in cold water, which, though it sounds counterintuitive, significantly speeds thawing.

Next time do like pepperidge farm and keep your puff pastry flat, folded only once. The issue is the way you are freezing it. It will defrost very quickly.

Leaving it on the counter is a bit faster but you can't heat puff pastry to defrost it.

You can't. You need to think ahead of time and defrost it in the refrigerator. Don't even think of doing the microwave thing! You will be very upset!
