It's summer and even though this cobbler is going overnight, it's better to be safe and bake it before you freeze and ship. You never know if there's going to be a delay and in the summer heat...
Personally,I would bake the cobbler to give it a more stable structure.The crust will also help seal the fruit somewhat ,keeping them on the bottom of the pan,under the baked topping.Good luck...this is a tricky one...ch
