Pickled onions make a great topping, and I like a slaw with mustard or, if the pork isn't spicy, with chipotle peppers.

The usual....coleslaw, potato salad, baked beans, corn on the cob, peach cobbler and ice cream, salad with maytag blue cheese dressing, German potato salad, lemon icebox pie, pasta salad, and "Half Moon Cookies". Basically anything you'd find at a good 4th of July cookout/covered dish dinner.

Don't forget the dill pickles for the sandwich.

Crispy, tart things to offset the richness of the pork - slaw is ideal.
