It depends on how you prepared them. If they are in large pieces (like, say, home fries), you can often scrape off the charred part if they're not too horribly burnt. If you're making something with small slices though (such as hash browns), then being burnt is past the point of no return.
It's worth pointing out that a little burn on potatoes is not a bad thing. They can hold a char flavor well, depending on the application. But usually it's best to utilize the fact that potatoes are cheap, and start over.
