I second and agree with Susan about rice paper rolls.
In the summer those are wonderful. They aren't cooked and filled with cooked things (like steamed shrimp)..shredded veggies and herbs like basil and mint. And sweetened lime flavored soy or fish sauce for dipping.
Give it a Google submitter, and see if you have those available locally...most Asian stores will have them.

You sure can. Just brush oil on the top of the folded roll, bake for about 20 minutes at 350°f. Delicious baked and they look pretty. :0)

I forgot to add...you can also make rice paper rolls too. Nice and refreshing during the summer.
