In search of...roasts

Now that the weather has turned cooler, I decided to make a different roast every Sunday for Sunday Dinner (and for sandwiches on Monday night). I'm in search of people's most favorite roast recipes -- poultry, beef, pork, game, fish -- anything that makes a nice Sunday supper and that I can reappropriate Monday (or beyond). Forgot to mention, while of course the next-day possibilities are endless, my favorite is a plate of cold slide leftover roast chicken, marinated or roasted veggies, maybe some cheese and/or something pickled, and some toasted ciabatta slices, all mixed and matched as I like with every single bite. Yum!

My favorite roast is good old-fashioned roast chicken. My favorite method: spatchcocked with herb-garlic butter under the skin and high-heat roasted, with a simple pan gravy made with shallots, and drippings supplemented with homemade stock, thickened with a beurre manie. Not much in the way of bells and whistles to the sauce, but it's full of concentrated chickeny goodness, which is good enough for me.

I was going to say pork, but just salt, pepper, garlic cloves studded in the pork. Roasted and a pan gravy served over white rice. A meal that an old boyfriends dad made every Sunday. Leftovers were the pork chopped up, heated in the gravy with mushrooms over the leftover rice.

I haven't made it, but Amanda's slow roasted duck looks really good. Duck salad or sandwiches the next day.

Last, but not least, rib roast with french dip sandwiches the next day. Or, my brother always makes burritos (with no beans to get in the way) with guac and roasted tomato salsa.

I'm hungry now.
