Can I freeze a buttercream and cream cheese frosting. I have way too much left over, even for a 4-layer torte!

I routinely make both in large batches to freeze intentionally. No need to treat either in a special manner. Just set them in the freezer, then pull them to the refrigerator the night before you plan to use them again.

I have successfully frozen cream cheese icing before !

Treat it as ice-cream, stirring as it freezes. De-freeze a sample - if it fails as frosting, eat the rest as ice-cream
