I'm making individual Apple Crisps for a crowd. Can I prepare the filling a day ahead?

That sounds like a good idea. When you do go to spoon the filling into the containers you are baking the desserts in, I'd suggest using a slotted spoon to remove any excess liquid that may have accumulated in the storage container.
