dense veg as base note to the richness of sage pesto. yams or sw potato, white potatoes, roasted onions, maybe even cauliflower. Good luck.

Other winter vegetables with a high sugar content, so they caramelize: another squash, like acorn, delicata, etc. Sweet potatoes. Turnips, parsnips, carrots.
