Should I double recipe? The recipe says 4 servings , but it seems like more.
The recipe says 4 servings, but it seems like much more. I’m cooking for about 20 at thanksgiving. There will be lots of sides, but I feel like I should make enough for everyone to get a taste. Any feedback on serving size? Should I plan to double? Thanks

An educated guess. - yes, make double the recipe for serving 20 people. If yes, you’ll have a bit about 5 1/2 ox or 3/4 cup squash per person. And cooked leftovers, should you have any, are good for many uses and/or in the freezer.
If you only make one recipe, the amount available for each person will be small - under 3 oz or about 3/8 cup per person. If you go that way, perhaps cube the squash to make small servings easier.
Your choice, depending on availability of produce, your cooking plan, oven and storage space.
Happy thanksgiving!
