Green garlic is immature garlic. It looks like a robust scallion. It's available in the springtime. If you are in the northern hemisphere in November, you'll want to substitute with other garlic and/or onions.

Green garlic is garlic harvested before it separates into cloves. It looks like a green or spring onion, but it isn't. It has a mild garlic flavor. You could use finely chopped leeks and a little garlic...or, wait until next spring and head to the farmer's market for the real thing.
