A question about a recipe: Andrew Feinberg's Slow-Baked Broccoli Frittata

I have a question about the recipe "Andrew Feinberg's Slow-Baked Broccoli Frittata" from Genius Recipes. I'm planning a brunch for some friends who can't do dairy, and I'm wondering how it will affect the texture if I skip the cheese? I know the flavor won't be quite as amazing... Has anyone tried this?

Texture will be just fine, but you'll probably want to increase the salt a little.
