hello! can I safely double this recipe (or should i just make twice)? would be great for Christmas dinner/dessert, but a 9" won't be enough. Thanks!

If by doubling you mean cooking twice the amount in a single large cake pan, I wouldn't. You'll likely have troubles with baking times, undone middle of cake, etc. Better to make 2 batches or 1 doubled batch and cook in two 9" pans. To serve, you can treat them as two cakes or two layers of a single cake, putting icing between & on top...maybe leaving sides open (newish style in wedding cakes). Good luck and enjoy.
