I like keeping ground chicken, turkey, lamb, pork, and/or beef on hand to make quick fillings for lettuce wraps, meat pies, quick 'pot pies', burritos/taco salads, or stuffing for vegetables (think portobello mushrooms, squash, or onions). They all make for great weeknight options to have as 'just-in-case'/'last resort' type meals, and they are often a lot healthier and cost-effective than takeout! Just saute your ground meat of choice with some minced garlic and onion, your favorite seasonings, and a flavorful liquid component, like citrus juice, teriyaki sauce, or barbecue sauce - whatever you're feeling that evening. Its really versatile, and keeps well as a leftover, too.

Hmm, these are my favorite beef meatball recipe on the site but perhaps who can use ground chicken. Also, if you do a search for Lamb with Orzo (winner of your best cheap feast contest) you could sub the lamb for chicken. You could cook the chicken for dumplings or make chicken burgers.
