Try a bread pudding with apples, cinnamon and nutmeg. Or make an apple Brown Betty. I second the French toast idea. You could do an overnight one or just fry it right up.
Run two slices, one at a time, through your pasta roller to make thin sheets. Wrap around white fish and fry in a pan with a little oil. If crust is brown before internal temp reached, finish in the oven. Full Disclosure: I saw this once on one of the competitive cooking shows and tried it, turned out perfect.
Hole In One. Cut a square out of the bread, toast off in a pan with olive oil/butter. Crack an egg into that hole....either cover and cook off the egg to your liking or do it uncovered. Enjoy.
French toast! Add a touch of vanilla to the eggs + milk and a sprinkling of cinnamon once the slices are in the pan.
Or croutons . . . put cubes in a large bowl, drizzle around the edges with olive oil and immediately toss well for about a minute; add smashed garlic that's then been mashed with the side of a heavy knife with salt and chopped fresh thyme, and toss thoroughly again; bake at 400 until crispy brown, tossing once or twice so all sides are exposed.
