the recipe calls for 2 slices whole wheat bread. judging from brands like pepperidge farm or arnold's, i'm guessing @ slice at 2 ounces. But wuth coating amounts, i always just make sure i have extra ingredients because one chef' chicken breast could be a very different size from another chef's. Plus there's your taste as well: maybe you like more nuts than bread crumbs. I have a recipe like this but grain mustard is folded into the egg whites and the fresh bread crumbs are mixed with ground pecans. Before serving, i drizzle maple syrup over the breasts. One suggestion is that you make a small batch of coating at a time. That way, you don't have to waste it or store it for later use.
