I have a beef top round roast and am growing tired of pot roast. Any suggestions for something easy and tasty without lots of special ingredients?

i once used a leftover roast for stroganoff over noodles. my current favorite is what i just had for lunch. i hollow out some steak rolls and fill the cavity with cut up beef, some of the jellied consome, chopped onions and some chopped up cheddar or swiss cheese. wrap in foil and bake for an hour at 300 degrees. sort of like a french dip with the juice in there. alternately, you could wrap up in a flour tortilla with some shredded cheese, onions, olives, corn and spinach (i raid the salad bar for the veggies and cheese) and add hatch enchilada sauce, cover, bake and you have a really tasty and healthy dinner.

You could always cut it up and use it as stew meat. Or make italian beef's out of it - just put it in the crockpot with some onions, garlic and spices, then shred it and eat on buns with pickled peppers.
