I also love this salad: https://food52.com/recipes/8823-shades-of-green-chopped-salad
and you can leave out the cheese if you like and it's still delicious (says the person whose husband hates strongly flavored cheese)

I always do a spring mix, shallot, and citrus segment salad with poppyseed dressing with quiche, balances the richness.

I love the sound of this. Do you have a dressing recipe?

https://food52.com/recipes/23769-summer-goddess-dressing this one is very similar to mine, with the addition of fresh citrus juice, grapefruit is nice!

I think something nice and fruity would do the trick, maybe spring or arugula mix with some poached peaches and blackberries, topped of with a raspberry vingarette, add some ginger to make it interesting.
