My regular oven is a portable convection oven. I cook everything 75 degrees lower than the temp called for (cookies, meats, etc etc)
and it works great. I LOVE convection cooking.
Usually the mfg says convection is about 25F hotter than non convection. I would go ahead as you are thinking but because all ovens have hot spots, rotate your cooking sheet so they all cook evenly Then use you instant read thermometer to make sure they come out perfect Remember they need to rest and will continue to cook while they rest.
