This is a long shot, but does anyone have any advice for Gluten Free baked goods/restaurants, etc for traveling in Israel?

My daughter will be spending 5 weeks there this summer and is bummed that she might not be able to enjoy all the street food like hummus, pita, Jerusalem bagels and the like.

No. But post a question on Bonnie Stern website. She just led something like her 6th trip to Israel focusing on restaurants, artisanal food producers, farmers, etc. She will either know or likely be able to connect you to someone who foes.
