Could I do this on a grill pan?

you could do it indoors but you won't get the same flavor as outdoor grill. If you have a smoker appliance, or use wood chips in a jurry-rigged smoker, you get the flavor but a lot of bother. If no outdoor grill or indoor smoker, perhaps just roast them in the oven.
