Can I roast tomatoes to skin them for Hazan's Tomato Butter & Onion Sauce?

I would like to roast my tomatoes to use in Hazan's Tomato Butter & Onion Sauce, would it be acceptable.

Sure. I did that last summer and only sort of skinned them. The sauce turned out great.

Absolutely. I roasted mine in the middle of summer, so I used my gas grill. My immersion blender made quick work of the few skins that didn't peel off easily.
