Moistly Grilled Smoking Platfom

I recently purchased this time (made by Charcoal Companion) because the price was "right" and I saw Bobby Flay use something like on the Food channel. I can't seem to find any instructions except to heat the grill to about 370F. Anyone have any experience with this type of smoking?
