Good luau menu?

Im doing a luau themed lunch for about 50 people in a month. I want it to feel as authentic as possible while making sure it will be generally liked by gourmands and picky eaters alike. So far the menu consists of Ham with pineapple salsa, Huli Huli chicken, Pani popo rolls, Coconut Rice, Pasta salad, Broccoli walnut salad, Coleslaw, Carrots or green beans, Fruit salad, banana pudding and sheet cake. Is there anything im leaving out that I absolutely should be including? Do you all think there are enough options for a couple vegetarians? I guess I would just like a second opinion:)

Macaroni salad! I always have bbq chicken with big scoops of white sticky rice and mac salad on my lunch plates in Hawaii.

You could make mock Kalua pig by slow roasting pork shoulder in a slow cooker and adding a little liquid smoke. Maybe lomilomi salmon - salted salmon cubes, diced tomato, diced onion, diced green onion? Adding a coconut dessert could stand in for haupia.
