Yes, you can bake the crust and fill with custard a day or 2 ahead. Just cover with clingfilm to prevent a skin from forming. The day you want to serve, top with the cream and toasted coconut. Leftovers store relatively well in the fridge but the toasted coconut gets a little soggy.
It's sweet, salty, and just a little bit tangy.
