Anyone have ideas/cautions on making this dairy free? Do you think I could use cashew cream instead?

I was looking at this recipe for myself (sadly, am lactose intolerant). I was thinking of using olive oil, perhaps not extra virgin as that would add a different flavor.

I think that may work well. I'm sure boulangere will respond though.
