I have a pan of the Huckleberry cookbook's cornbread left over from last night. What should I make tonight to serve with it?

I made this last night and served it with cornbread:

American chilli (with or without beans)
Use the cornbread as a base (instead of bread dough) for a sort-of pizza dish
Anything you'd serve over polenta

I'd cook up a big pot of collards with ham hocks. Or, since it's Monday, go traditional New Orleans and make red beans and rice!

I like to serve cornbread with a soup of puréed greens, like spinach or chard.
Also, gumbo of course; this recipe is great: http://cooking.nytimes...
