I'm making shaved Brussels sprout salad (the great Frankie's recipe). Think it's ok to shave the sprouts today?

Yum! I love a shaved Brussel sprout salad!!
You can shave the sprouts in advance and just keep them covered in the fridge overnight. (I sometimes keep them in a ziplock bag with a paper towel on the top to absorb any moisture if I don't have space in my fridge for a covered bowl.)
I would recommend cooking them and/or dressing them (if you plan to do either) day of or as close to meal time as possible.

I have this same question! I was planning on coating with citrus to keep them from browning. Do folks think that step is necessary?
