For a Brussels sprout salad, does it make a difference whether I use large, medium or small ones? Thank you. ;o)

I find the large ones can have a bitter taste.

I agree, with what has been said already: size doesn’t matter, but having gotten frost does. And brussel sprouts also tend to get bitter (especially unpleasant in a salad), when they are stored too long – try to find really fresh ones at a farmers’ market!

Unike some veggies, the size doesn't matter as much as being grown in the right season. Brussels grown and harvested when it's too warm out are bitter. They really need frosty nights and mornings to produce those nice sweet sprouts. Here in Oregon, it's too soon for them to be in season. Soon though. :0)

Don't think size matters especially if you are going to shred them.
