I have definitely run my hand to the blade with them a few times and they work. They can also be cleaned in the dishwasher.
Luckily, I've never had to test them out for real, but they are what we use on our manufacturing floor, which is why I went with them. They've been good so far (but, again, with no real-world proof of that, thank God, I'm always afraid of it when I use my mandoline!)
If you go to a restaurant supply store, they have special mesh gloves that are designed for this. I don't know how much they are today, it was over ten years ago and those ones were nylon.
I actually use some plain white cotton gloves which were previously stained. Since they were already in the house, I started using them with my mandoline. They're ripped in a couple of places, but they still provide adequate protection years later.
