Can I use beef kidney for a soup broth? liver? sweet bread?

Most offal can, but shouldn't be used for broths and stocks. The high amount of iron in liver and to a certain extent kidneys can create an off-putting metallic taste when cooking for extended periods of time. Further, they create a cloudy stock. If you are fine with a funky and gamey flavor, then yes, you may use them. It is really a personal preference.
