I'm making soft pretzels. I don't have read flour. have all purpose , while wheat flour or pastry flour. Which should I use?

Use all-purpose flour. It will have a higher gluten content, closer to bread flour than your other choices.

Thank you! I decided to use 1 3/4 c AP flour and 3/4 c whole wheat flour. My little girls loved the making these! They were delicious!!
