Can I sear meat at night, refrigerate, and next morning put into slow cooker for the day?

Yes, I have done this many times. I often get my slow cooker all ready to go the night before, put it in the fridge, and then pull it out and turn it on the next morning. It may take a little longer to cook since your ingredients are cold at the start, but I haven't noticed any difference.
