Good question -- Sara double-checked her notes and it should be 1 cup of each type of cheese—the recipe has been updated to reflect this!

That is quite a bit of cheese. The Carbonara recipe that I use calls for a cup of cheese and it turns out perfect every time.

That's a little nutty. There are several questions in the recipe comment section about the cheese that have gone unanswered so far.
