in my town there is at least one restaurant that pairs its dishes with wines. you could like online at restaurants that specialize in pairings and get some ideas that way.
I would serve a cheese from the same region of California? Where is the Cab from? It could go well with a Cowgirl Creamery Mt. Tam triple cream or a Humbolt Fog goat cheese. Riconada Farm on the Central Coast does a Pozu Tomme which is a semi-hard cheese and quite good.
Definitely some red meet. RIbs, or short ribs would be nice. portobello mushrooms, toast some baguette slices, top fresh ricotta cheese and some sauteed mushrooms. small plates with cheese and salami , cheddar & Gouda. grilled polenta rounds, mini meatballs or burger sliders. sliced filet mignon on cracker or bread. grilled skirt steak , sliced and wrapped in small flour tortillas.
