A butternut squash recipe for summer?

My husband went on a grocery run for spaghetti squash and came back with a butternut. All of my go to butternut squash recipes are very fall-oriented. Anyone have a recipe for a summertime butternut squash? Thanks!

I usually just cube it up , toss with olive oil , paprika, cumin , salt and pepper. roast at 425 till soft , maybe a quick hit on broil to char it up and done. you can use it as a side warm or toss with salad greens. Dona's recipe sounds good also. Let us know what you decide to make.
